- 1.5 pounds boneless, skinless chicken breast
- 2 cans (10-ounce) cream of chicken soup
- 2 packets ranch seasoning mix
- 1 pound Yukon gold potatoes, chopped
- Grated Parmesan cheese, to taste
- Water, as needed
Instructions
- Slice the chicken breast if desired, then place it at the bottom of your slow cooker.
- Pour the cream of chicken soup over the chicken, ensuring it’s evenly coated.
- Sprinkle the ranch seasoning mix over the top and mix gently to distribute the seasoning.
- Scatter the chopped Yukon gold potatoes around the chicken in the slow cooker.
- Add enough water to help thicken the sauce, about a cup.
- Cover and cook on low for 6 hours, or on high for 3-4 hours, until the chicken is cooked and tender.
- Before serving, sprinkle freshly grated Parmesan cheese over the top and serve warm.
Notes
For a vegan version, substitute chicken with firm tofu or chickpeas and use coconut milk instead of cream of chicken soup.
