Description

A comforting and flavorful slow-cooked chicken dish featuring creamy garlic and Parmesan, perfect for family gatherings.


Ingredients

  • 1.5 pounds boneless, skinless chicken breast
  • 2 cans (10-ounce) cream of chicken soup
  • 2 packets ranch seasoning mix
  • 1 pound Yukon gold potatoes, chopped
  • Grated Parmesan cheese, to taste
  • Water, as needed

Instructions

  1. Slice the chicken breast if desired, then place it at the bottom of your slow cooker.
  2. Pour the cream of chicken soup over the chicken, ensuring it’s evenly coated.
  3. Sprinkle the ranch seasoning mix over the top and mix gently to distribute the seasoning.
  4. Scatter the chopped Yukon gold potatoes around the chicken in the slow cooker.
  5. Add enough water to help thicken the sauce, about a cup.
  6. Cover and cook on low for 6 hours, or on high for 3-4 hours, until the chicken is cooked and tender.
  7. Before serving, sprinkle freshly grated Parmesan cheese over the top and serve warm.

Notes

For a vegan version, substitute chicken with firm tofu or chickpeas and use coconut milk instead of cream of chicken soup.
