Ingredients

  • 2 Tablespoons butter
  • 1 ½ cups chicken broth
  • 3 Tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes
  • ½ teaspoon paprika
  • ⅓ cup chopped sun-dried tomatoes (drained)
  • ½ cup freshly grated parmesan cheese
  • 10 fresh basil leaves (chopped)

Instructions

  1. Season the chicken breasts on both sides with garlic powder, onion powder, salt, and black pepper.
  2. In a skillet, heat the olive oil and butter over medium heat. Sear the chicken for about 3-4 minutes per side until golden brown.
  3. In a small bowl, whisk together the chicken broth and cornstarch until smooth.
  4. Pour the broth mixture into the slow cooker, and stir in minced garlic, heavy cream, Italian seasoning, salt, pepper, red pepper flakes, and paprika.
  5. Add the chopped sun-dried tomatoes, grated parmesan, and fresh basil; mix well.
  6. Nestle the seared chicken into the sauce, ensuring it’s well-coated.
  7. Cover and cook on LOW for about 3 hours or HIGH for 1½ hours until the chicken is cooked through and tender.
