- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream
- 2 tbsp cornstarch
- ½ cup sun-dried tomatoes, chopped
- 4 sprigs fresh thyme
- ½ tsp red pepper flakes
- ¼ cup Parmesan cheese
Instructions
- Season the chicken by sprinkling both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 3-4 minutes per side.
- Add minced garlic to the skillet and sauté for an additional minute until fragrant.
- Pour in the chicken broth and heavy cream, then whisk in cornstarch. Stir in sun-dried tomatoes, thyme, and red pepper flakes.
- Transfer the seared chicken to the crockpot and pour the creamy sauce over it. Cook on low for 4 hours.
- Before serving, stir in Parmesan cheese until melted and creamy.
Notes
For a dairy-free version, substitute heavy cream with coconut milk and use nutritional yeast instead of Parmesan cheese.
