Ingredients

  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 tbsp cornstarch
  • ½ cup sun-dried tomatoes, chopped
  • 4 sprigs fresh thyme
  • ½ tsp red pepper flakes
  • ¼ cup Parmesan cheese

Instructions

  1. Season the chicken by sprinkling both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 3-4 minutes per side.
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Pour in the chicken broth and heavy cream, then whisk in cornstarch. Stir in sun-dried tomatoes, thyme, and red pepper flakes.
  5. Transfer the seared chicken to the crockpot and pour the creamy sauce over it. Cook on low for 4 hours.
  6. Before serving, stir in Parmesan cheese until melted and creamy.

Notes

For a dairy-free version, substitute heavy cream with coconut milk and use nutritional yeast instead of Parmesan cheese.
