- 2 lbs boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Place the chicken breasts at the bottom of your crockpot, spaced evenly.
- In a medium bowl, combine cream cheese, heavy cream, Parmesan, minced garlic, Italian seasoning, salt, and black pepper. Mix until smooth.
- Pour the creamy mixture over the chicken breasts, ensuring each piece is coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until fully cooked and easily shred with a fork.
- Shred the chicken in the crockpot and stir into the sauce.
- Optionally, add sun-dried tomatoes or spinach in the last 30 minutes of cooking.
- Garnish with fresh parsley before serving.
