Ingredients
Scale
- 1 lb chicken breasts
- 1 cup wild rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp sage
- Salt and pepper to taste
Instructions
- In a Crockpot, combine chicken breasts, wild rice, chicken broth, diced carrots, celery, chopped onion, minced garlic, thyme, sage, salt, and pepper. Stir well to ensure all ingredients intermingle.
- Cook on low for 6-8 hours, allowing the flavors to deepen and the chicken to become tender while the wild rice cooks perfectly.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the Crockpot, stirring it into the flavorful broth.
- Gently stir in the heavy cream and let cook for an additional 30 minutes to meld the rich flavors.
- Serve hot, ensuring everyone gets a hearty helping of this delicious soup.
Notes
For a lighter version, consider substituting the heavy cream with half-and-half or coconut cream.
