Description

A warm, hearty comfort meal featuring tender chicken, vegetables, and robust spices, all cooked in a crockpot for an effortless family dinner.

Ingredients

Scale
  • 4 chicken breasts
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Cooked pasta or rice for serving

Instructions

  1. Place the chicken breasts in the bottom of your crockpot.
  2. Top the chicken with sliced onion, bell pepper, and minced garlic.
  3. Add crushed tomatoes and chicken broth over the mixture.
  4. Sprinkle in dried oregano, basil, salt, and pepper, mixing gently if desired.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fork-tender.
  6. Gently shred the chicken in the crockpot using two forks before serving.
  7. Spoon the cacciatore over a bed of cooked pasta or rice.

Notes

For optimal flavor, longer crockpot times enhance the melding of spices. Avoid overcooking; it should be shreddable, not mushy.
