Description

This Crockpot Cheesy Potatoes and Kielbasa is creamy, hearty, and packed with rich cheesy flavor and smoky sausage. It’s the perfect comfort food for busy weeknights or cozy weekends.


Ingredients

  • 12 oz beef kielbasa, sliced into ½-inch pieces
  • 3 cans (14.5 oz each) diced potatoes, drained
  • 1 cup heavy whipping cream
  • ½ can cheddar cream soup
  • 1 cup chicken broth
  • 2 tablespoons melted butter
  • 1 cup shredded cheddar cheese (Colby Jack works too)
  • ½ cup chopped onions (sweet, white, or red)
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

1. Spray slow cooker liner with nonstick spray.

2. Drain canned potatoes completely in a strainer.

3. Add potatoes and melted butter to crockpot, sprinkle with pepper, onion powder, and garlic powder, and mix to coat.

4. Add sliced kielbasa and chopped onions.

5. Pour in heavy whipping cream, chicken broth, and shredded cheese, then stir well.

6. Add cheddar cream soup and mix until fully combined.

7. Cover and cook on high for 3–4 hours or low for 5–6 hours until potatoes are soft and creamy.

8. If desired, mix 1 teaspoon cornstarch with 2 teaspoons water and stir in during last hour for thicker sauce.

9. Serve warm with extra cheese or parsley on top.

Notes

Drain potatoes well before mixing to avoid watery sauce. Stir once during cooking for even texture. Use freshly shredded cheese for smooth melting. Add a dash of smoked paprika for flavor depth. Store leftovers in the fridge up to 3 days.
