Description

This Crockpot Blueberry Peach Cobbler is full of juicy blueberries and peaches with a golden, buttery topping. It’s an easy slow cooker dessert that tastes like summer comfort in every bite.


Ingredients

  • For the fruit:
  • 5 cups fresh or frozen peaches, peeled and sliced if fresh
  • 3 cups fresh or frozen blueberries
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • For the cobbler dough:
  • 1 1/4 cups all-purpose flour or white whole wheat flour
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 5 tablespoons cold unsalted butter, cut into small cubes
  • 1/3 cup buttermilk

Instructions

1. In a large bowl, combine peaches, blueberries, sugar, cornstarch, and vanilla extract. Stir gently and set aside.

2. In another bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Cut in cold butter until mixture resembles small crumbs. Add buttermilk and stir until just combined.

3. Spray the bottom of the slow cooker with nonstick spray. Crumble the dough evenly over the bottom.

4. Stir the fruit again to combine, then spread evenly over the dough, leaving excess juices behind.

5. Cover and cook on HIGH for 2 1/2 to 3 hours or LOW for 4 to 5 hours until filling is bubbly and the topping is cooked through.

6. Turn off heat and let cobbler rest for 20–30 minutes to thicken.

7. Serve warm with vanilla ice cream or whipped cream.

Notes

If using frozen fruit, do not thaw before cooking. Plan for a slightly longer cook time.

For a crispier topping, prop the lid open slightly during the last 30 minutes to let steam escape.

Store leftovers in the fridge for up to 3 days and reheat before serving.

This recipe can be baked in the oven at 375°F for 35–40 minutes in a 9×9-inch dish.
