- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 potatoes, diced
- 2 carrots, sliced
- 1 can corn, drained
- 1 can green beans, drained
- 1 can diced tomatoes
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with the chopped onion and minced garlic over medium heat. Drain excess fat.
- Transfer the beef mixture to the slow cooker.
- Add the diced potatoes, sliced carrots, drained corn, drained green beans, diced tomatoes, beef broth, and Worcestershire sauce.
- Season with salt and pepper to taste, and stir all the ingredients together until combined.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until vegetables are fork-tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
For variations, try adding chopped jalapeƱos for spiciness or replace beef with lentils for a vegetarian version.
