Description

A comforting and satisfying stew perfect for chilly nights, packed with fresh vegetables and flavorful ground beef, cooked slowly in a crock pot.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 potatoes, diced
  • 2 carrots, sliced
  • 1 can corn, drained
  • 1 can green beans, drained
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic over medium heat. Drain excess fat.
  2. Transfer the beef mixture to the slow cooker.
  3. Add the diced potatoes, sliced carrots, drained corn, drained green beans, diced tomatoes, beef broth, and Worcestershire sauce.
  4. Season with salt and pepper to taste, and stir all the ingredients together until combined.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until vegetables are fork-tender.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

For variations, try adding chopped jalapeƱos for spiciness or replace beef with lentils for a vegetarian version.
