- 3 pounds russet potatoes, peeled and cubed
- 1 cup chicken broth (or vegetable broth for a vegetarian option)
- 1 cup sour cream
- 1/2 cup unsalted butter, softened
- Salt and pepper to taste
- Optional: 1 cup shredded cheese or garlic for added flavor
Instructions
- Peel and cube the russet potatoes into even pieces.
- Add the cubed potatoes to your crock pot. Pour in the chicken or vegetable broth evenly over the potatoes.
- Dollop in the softened butter and sour cream. Season with salt and pepper according to your taste.
- Set your crock pot on low for 4 hours. Cover and let the potatoes become tender.
- Once the cook time is up, mash the potatoes directly in the crock pot until creamy and adjust seasoning if necessary.
- For added flavor, mix in shredded cheese or roasted garlic.
- Scoop into serving dishes and garnish as desired.
