Ingredients

  • 3 pounds russet potatoes, peeled and cubed
  • 1 cup chicken broth (or vegetable broth for a vegetarian option)
  • 1 cup sour cream
  • 1/2 cup unsalted butter, softened
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheese or garlic for added flavor

Instructions

  1. Peel and cube the russet potatoes into even pieces.
  2. Add the cubed potatoes to your crock pot. Pour in the chicken or vegetable broth evenly over the potatoes.
  3. Dollop in the softened butter and sour cream. Season with salt and pepper according to your taste.
  4. Set your crock pot on low for 4 hours. Cover and let the potatoes become tender.
  5. Once the cook time is up, mash the potatoes directly in the crock pot until creamy and adjust seasoning if necessary.
