- 2 lbs chicken, cut into pieces
- 1 cup plain yogurt
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
- Rice and naan for serving
Instructions
- In a mixing bowl, stir together the yogurt, curry powder, cumin, coriander, turmeric, salt, and pepper until well blended to form a marinade. Toss the chicken pieces in this mixture, ensuring they are evenly coated. Allow it to marinate for at least 30 minutes—ideally, longer for deeper flavors.
- Lightly grease the interior of your crock pot. Add the marinated chicken along with the diced tomatoes, coconut milk, chopped onion, minced garlic, and ginger. Stir gently to combine all ingredients.
- Cover the crock pot with the lid and cook on the low setting for 6-8 hours or on high for 3-4 hours. Check that the chicken is tender and has absorbed all that lovely flavor.
- Serve your Indian curry hot, accompanied by fluffy rice and warm naan, soaking up those comforting sauces.
