  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, chopped
  • 34 garlic cloves, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Italian seasoning to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot, ensuring they are flat and evenly spaced.
  2. Chop the onion and mince the garlic. Layer them on top of the chicken, followed by sprinkling the Italian seasoning.
  3. Pour the crushed tomatoes over the chicken and other ingredients.
  4. Gently pour in the low-sodium chicken broth, covering the pot securely.
  5. Cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
  6. Shred the chicken in the pot using two forks.
  7. Stir in the heavy cream and gradually add the Parmesan cheese until melted and creamy.
  8. Cook uncovered on low for an additional 20–30 minutes before serving.
