Ingredients

- 1 pound chicken breast, cut into pieces
- 8 ounces pasta (penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Parmesan cheese, for serving
- Chopped parsley, for garnish
Instructions
- In a Crock Pot, combine the chicken pieces, chopped bell pepper, onion, minced garlic, Cajun seasoning, chicken broth, salt, and pepper.
- Cover and cook on low for 4-6 hours, or until the chicken is tender and easily shredded.
- About 30 minutes before serving, add the heavy cream and pasta, stirring to combine.
- Continue cooking until the pasta is tender and has absorbed the Cajun flavors.
- Serve warm, topped with Parmesan cheese and parsley.
Notes
For a lighter option, substitute heavy cream with half-and-half. Adjust Cajun seasoning based on your spice preference.
