Ingredients

  • 1 pound chicken breast, cut into pieces
  • 8 ounces pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Chopped parsley, for garnish

Instructions

  1. In a Crock Pot, combine the chicken pieces, chopped bell pepper, onion, minced garlic, Cajun seasoning, chicken broth, salt, and pepper.
  2. Cover and cook on low for 4-6 hours, or until the chicken is tender and easily shredded.
  3. About 30 minutes before serving, add the heavy cream and pasta, stirring to combine.
  4. Continue cooking until the pasta is tender and has absorbed the Cajun flavors.
  5. Serve warm, topped with Parmesan cheese and parsley.
