A cozy, creamy slow-cooker meal that’s perfect for busy weeknights, with Italian herbs and a comforting sauce.
Ingredients
Scale
- 1.5 pounds Boneless, Skinless Chicken Breasts
- 4 ounces Cream Cheese, softened
- 3 tablespoons Unsalted Butter
- 10.5 ounces Cream of Chicken Soup
- 3 cloves Garlic, minced
- 0.75 cup Chicken Broth
- 1 packet Good Seasons Dry Italian Salad Dressing Mix
- 16 ounces Angel Hair Pasta
- Chopped Fresh Parsley, for garnish
- Cracked Pepper & Grated Parmesan Cheese, to taste
Instructions
- Lightly grease the crock pot insert and layer the chicken breasts at the bottom.
- In a bowl, whisk together the cream of chicken soup, softened cream cheese, minced garlic, chicken broth, butter, and Italian dressing mix until mostly smooth.
- Pour the sauce over the chicken, cover, and cook on low for 3.5 to 4 hours until the chicken reaches 165°F and is tender enough to shred.
- Remove chicken, shred it with two forks, and stir back into the crock pot.
- Cook angel hair pasta al dente according to package directions, drain, and toss with a small knob of butter.
- Serve the creamy chicken over the pasta, garnished with parsley, cracked pepper, and Parmesan cheese.
Notes
Cooking on low yields juicier, tender chicken. Soften cream cheese for easier mixing, and taste the sauce before serving to adjust seasoning as desired.
