Instructions
- Preheat your oven to 400°F (200°C).
- Set up three shallow dishes: one with flour, another with beaten eggs, and a third combining panko breadcrumbs with grated Parmesan cheese.
- Season both sides of the chicken breasts with salt and pepper. Dredge each piece in flour, dip into the egg, and finally coat thoroughly with the breadcrumb mixture.
- In a large frying pan, heat butter and olive oil over medium heat. Fry the chicken until golden brown on both sides, about 4-5 minutes per side.
- Transfer the chicken to a baking sheet and bake for an additional 10 minutes or until the internal temperature reaches 165°F (75°C).
- In the same pan, sauté the minced garlic until fragrant, then pour in the chicken broth and heavy cream. Add lemon juice and simmer gently until thickened.
- Serve the crispy chicken drizzled with garlic sauce and garnished with freshly chopped parsley.
