Description

A crispy and flavorful chicken dish that combines panko breadcrumbs and Parmesan cheese for a golden-brown crust and rich flavors, perfect for family dinners.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1.5 lbs), halved horizontally to make 4 cutlets
  • 1/2 cup full-fat mayonnaise
  • 1 cup panko breadcrumbs
  • 3/4 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • Olive oil spray or melted butter for finishing

Instructions

  1. Preheat your oven to 425°F and position a wire rack inside a rimmed baking sheet.
  2. In a mixing bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, kosher salt, and black pepper.
  3. Brush one side of each chicken cutlet generously with mayonnaise.
  4. Press the mayo-coated cutlet into the panko mixture to ensure even coating.
  5. Lightly spray or brush the tops of the coated cutlets with olive oil or melted butter.
  6. Bake in the preheated oven for 18-22 minutes, until golden brown and internal temperature reaches 165°F.
  7. Allow the chicken to rest for about 5 minutes before serving.
