- 2 large boneless, skinless chicken breasts (about 1.5 lbs), halved horizontally to make 4 cutlets
- 1/2 cup full-fat mayonnaise
- 1 cup panko breadcrumbs
- 3/4 cup finely grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- Olive oil spray or melted butter for finishing
Instructions
- Preheat your oven to 425°F and position a wire rack inside a rimmed baking sheet.
- In a mixing bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, kosher salt, and black pepper.
- Brush one side of each chicken cutlet generously with mayonnaise.
- Press the mayo-coated cutlet into the panko mixture to ensure even coating.
- Lightly spray or brush the tops of the coated cutlets with olive oil or melted butter.
- Bake in the preheated oven for 18-22 minutes, until golden brown and internal temperature reaches 165°F.
- Allow the chicken to rest for about 5 minutes before serving.
