- 1 large egg
- Vegetable oil, for frying
- Optional: Chopped fresh cilantro for garnish
Instructions
- In a skillet, heat a tablespoon of oil over medium heat. Sauté the chopped onion until translucent, then add minced garlic, cooking until fragrant. Add ground beef, season with chili powder, cumin, salt, and pepper. Cook until browned, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the cooled mashed potatoes, cooked beef mixture, flour, and egg. Stir until everything is well incorporated and forms a dough-like consistency.
- Divide the mixture into equal portions. Roll them into balls and then flatten them slightly into patties, about ½ inch thick.
- In a skillet, heat vegetable oil over medium-high heat. Carefully place the potato pancakes in the skillet, frying for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, transfer the pancakes to a plate lined with paper towels to absorb excess oil. Serve hot, garnished with fresh cilantro and your choice of dipping sauce, if desired.
