Description
Crispy, low-calorie air fryer eggplant that’s simple and satisfying!
Ingredients
- 1 large eggplant (peeled as desired and diced into 1-inch cubes)
- 2 tablespoons avocado oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/4 teaspoon kosher salt (plus more for salting eggplant)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Instructions
1. Spread eggplant cubes and generously salt them. Let sit 15-30 minutes.
2. Pat dry with towel.
3. Transfer to bowl, drizzle with avocado oil, and toss.
4. Add spices and mix until evenly coated.
5. Preheat air fryer to 400°F.
6. Arrange eggplant in single layer and air fry 18 minutes, tossing halfway.
7. Remove and serve hot and crispy.
Notes
Try peeling only partially for color contrast.
Serve with a drizzle of balsamic glaze.
Reheat leftovers in the air fryer 3–5 min for best texture.
