Description

Crispy on the outside, creamy inside — these Garlic Parmesan Roasted Sweet Potatoes are the ultimate savory side dish for weeknights or holidays.


Ingredients

Scale
  • 3 medium sweet potatoes (about 2 pounds total), cut into 1 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher asalt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/4 cup finely grated Parmesan cheese, divided

Instructions

1. Preheat your oven to 425°F and position a rack in the middle.

2. In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper until evenly coated.

3. Spread the potatoes in a single layer on a rimmed baking sheet. Roast for 15 minutes.

4. Flip the potatoes using a flat spatula. Continue roasting for another 10 minutes until browned and tender.

5. Remove from the oven and set to broil.

6. Sprinkle the garlic and half of the Parmesan over the potatoes. Stir well to coat.

7. Add the remaining Parmesan on top and broil for 1–2 minutes, until melted and slightly golden.

8. Serve hot and enjoy!

Notes

Swap in smoked paprika or rosemary for extra flavor.

Use parchment for easier cleanup.
