Description
Crispy outside, chewy inside! Brazilian cheese bread (pão de queijo) is a cheesy, gluten-free favorite you can bake fresh or freeze.
Ingredients
- 1 cup grated Parmesan cheese
- 1 (10oz) queso fresco, crumbled (or sub 1 cup grated aged cheddar)
- 1 cup full-fat milk
- 1/4 cup vegetable oil
- 2 eggs
- 1 lb tapioca flour
- 2 tsp kosher salt
Instructions
1. Preheat oven to 350°F
2. Whisk tapioca flour and salt
3. Mix cheeses and eggs
4. Simmer milk and oil, then pour into tapioca mix and stir
5. Let cool 5–10 minutes, then add cheese and eggs
6. Mix to form dough
7. Oil hands and roll 1–2 tbsp balls
8. Place on baking sheet 2″ apart
9. Bake 30–35 minutes until golden
Notes
Freeze unbaked balls for 3–4 months
Bake from frozen at 350°F for 40–45 minutes
White specks in dough are normal
