  • 1/4 cup vegetable oil (plus 1 Tbsp for oiling hands)
  • 2 eggs
  • 1 lb tapioca flour (aka tapioca starch)
  • 2 tsp kosher salt

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, whisk together the tapioca flour and salt.
  3. In a separate bowl, mix the cheeses and eggs.
  4. In a saucepan, bring the milk and oil to a simmer.
  5. Remove from heat and immediately pour the hot liquid into the tapioca mix. Stir until clumpy and sticky.
  6. Let cool for 5–10 minutes, then add the cheese and egg mixture. Mix by hand until smooth.
  7. Oil your hands, roll 1–2 tbsp dough into balls, and space 2″ apart on a baking sheet.
