Description

A comforting, creamy Tuscan chicken skillet dish with garlic, sun-dried tomatoes, and fresh spinach, perfect for weeknight dinners.


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • 4 cups fresh spinach
  • 1/4 cup fresh basil leaves (optional)

Instructions

  1. Pat the chicken breasts dry and season with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken 4 to 5 minutes per side until golden and just cooked through; remove to a plate and tent loosely.
  2. Lower heat to medium, add a touch more oil if needed and sauté minced garlic until fragrant, about 30 seconds. Add chopped sun-dried tomatoes, Italian seasoning, and heavy cream, simmering gently until slightly thickened, then stir in grated Parmesan until melted and cohesive.
  3. Return chicken to the pan and nestle into the sauce, spooning it over each piece; add fresh spinach and let it wilt in the warm cream. Finish with torn basil leaves and extra Parmesan if desired, then serve with crusty bread or pasta to soak up the sauce.

Notes
