Ingredients

- 8 oz pasta
- 1 lb chicken breast, diced
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Cook pasta according to package instructions until al dente. Drain well and set aside, reserving a cup of starchy pasta water.
- In a large skillet, heat a drizzle of olive oil over medium heat. Sauté the diced chicken until golden and cooked through, about 6-8 minutes.
- Add minced garlic to the pan, stirring for about 1 minute until fragrant.
- Toss in halved cherry tomatoes and fresh spinach; continue cooking until the spinach wilts down, about 2-3 minutes.
- Lower the heat and stir in heavy cream, Italian seasoning, and parmesan. Mix until everything is coated.
- Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Season with salt and pepper to taste. Serve warm, garnished with extra parmesan if desired.
