Description

A quick and easy creamy Tuscan chicken pasta that envelops you in warmth and soul.


Ingredients

  • 8 oz pasta
  • 1 lb chicken breast, diced
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook pasta according to package instructions until al dente. Drain well and set aside, reserving a cup of starchy pasta water.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Sauté the diced chicken until golden and cooked through, about 6-8 minutes.
  3. Add minced garlic to the pan, stirring for about 1 minute until fragrant.
  4. Toss in halved cherry tomatoes and fresh spinach; continue cooking until the spinach wilts down, about 2-3 minutes.
  5. Lower the heat and stir in heavy cream, Italian seasoning, and parmesan. Mix until everything is coated.
  6. Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  7. Season with salt and pepper to taste. Serve warm, garnished with extra parmesan if desired.
