This creamy tortellini carbonara with beef is a rich, indulgent twist on the classic Italian dish. Cheese-stuffed tortellini are tossed in a velvety parmesan-egg sauce with savory ground beef—perfect for weeknights or a cozy dinner party.
Ingredients
- 18 oz cheese-stuffed tortellini
- 2 large eggs
- 1 cup parmesan cheese, grated
- 6 oz ground beef or finely diced steak
- 2 cloves garlic, minced (optional)
- Freshly ground black pepper, to taste
- Salt, to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook tortellini according to package directions. Reserve 1/4 cup pasta water, then drain.
2. In a medium bowl, whisk together eggs and parmesan cheese until smooth. Set aside.
3. In a large skillet, brown the beef over medium heat until fully cooked and edges are crispy. Stir in garlic during the last minute, if using. Remove skillet from heat.
4. Add drained tortellini to the skillet with the beef. Pour in the egg-parmesan mixture, stirring constantly to avoid scrambling.
5. Gradually add reserved pasta water, 1 tablespoon at a time, until sauce reaches your desired creamy consistency.
6. Season with black pepper and salt to taste. Garnish with parsley and extra parmesan. Serve hot.
Notes
Use lean ground beef to keep the sauce smooth and not greasy.
If you prefer extra richness, a splash of cream can be added with the egg mixture.
