Description

Ingredients

  • Fresh tomatoes
  • Olive oil
  • Garlic
  • Onion
  • Vegetable broth
  • Fresh basil
  • Heavy cream
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the fresh tomatoes in half and lay them cut-side up on a baking sheet. Drizzle with olive oil and scatter minced garlic and chopped onions over them. Season with salt and pepper.
  3. Roast for 30-40 minutes until the tomatoes are caramelized and fragrant.
  4. Allow the tomatoes to cool for a few minutes.
  5. In a large pot, combine the roasted tomatoes, vegetable broth, and fresh basil. Simmer on low heat for 15 minutes.
  6. Blend the soup until silky smooth.
  7. Stir in the heavy cream and adjust seasoning as needed.
  8. Ladle the soup into bowls and garnish with fresh basil before serving.
