Ingredients

  • 8 oz mushrooms (crimini), sliced
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt (to taste)
  • Coarsely ground black pepper (to taste)
  • Red pepper flakes (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced crimini mushrooms, seasoning with salt and pepper. Cook until they turn golden brown, around 5-7 minutes.
  2. Toss in the potato gnocchi together with the chicken broth. Allow it to simmer for 2-3 minutes, or until the gnocchi starts floating to the surface.
  3. Reduce heat slightly and stir in the heavy cream, minced garlic, Italian seasoning, and smoked paprika. Let this simmer gently until it becomes slightly thick.
  4. Fold in fresh spinach and stir until just wilted. Adjust seasoning as needed with salt, pepper, or red pepper flakes.
