Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cooked rice
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and paprika, then cook for about 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic; sauté until translucent.
  4. Stir in the cream of chicken soup and chicken broth, mixing until well combined and bubbly.
  5. Spread the cooked rice in a baking dish, creating a bed for the creamy mixture. Pour the sauce over the rice and nestle the chicken on top.
  6. If desired, sprinkle shredded cheese over the chicken.
  7. Cover the baking dish with aluminum foil and bake for 25-30 minutes until the chicken is cooked through.
  8. Garnish with freshly chopped parsley before serving.

Notes

For a deeper flavor, ensure chicken is well-browned before the sauce is added. Add more broth if the sauce is too thick. Let the dish rest a few minutes before serving.
