Description
A comforting dish of tender chicken and fluffy rice bathed in a rich, creamy sauce, perfect for weeknight dinners or special gatherings.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 cups cooked rice
- 1 cup cream of chicken soup
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and paprika, then cook for about 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic; sauté until translucent.
- Stir in the cream of chicken soup and chicken broth, mixing until well combined and bubbly.
- Spread the cooked rice in a baking dish, creating a bed for the creamy mixture. Pour the sauce over the rice and nestle the chicken on top.
- If desired, sprinkle shredded cheese over the chicken.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes until the chicken is cooked through.
- Garnish with freshly chopped parsley before serving.
Notes
For a deeper flavor, ensure chicken is well-browned before the sauce is added. Add more broth if the sauce is too thick. Let the dish rest a few minutes before serving.
