Ingredients

- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon Italian seasoning
- 8 ounces tortellini
- 2 cups spinach, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, crumble and cook the sausage until browned, about 6 to 8 minutes.
- Add the chopped onion, diced carrots, and diced celery; sauté until softened, about 5 to 7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant, then add the Italian seasoning.
- Pour in the chicken broth and diced tomatoes with their juices; return the sausage to the pot and bring to a simmer.
- Add the tortellini and cook according to package directions, usually 3 to 5 minutes, stirring occasionally.
- Stir in the chopped spinach and heavy cream, simmering for 1 to 2 minutes until the spinach wilts.
- Season with salt and pepper; serve hot in bowls.
Notes
For a lighter option, use half-and-half instead of heavy cream or swap in turkey sausage.
