Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 1 cup sliced pepperoncini peppers
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  2. Season the chicken breasts generously with salt and pepper and sear until golden brown, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, add the onions and garlic, sauté until softened, about 3 minutes.
  4. Add the pepperoncini and cook for another 2 minutes.
  5. Pour in the chicken broth, scraping the skillet to incorporate any browned bits.
  6. Stir in the heavy cream and bring to a gentle simmer.
  7. Return the chicken to the skillet and simmer until cooked through, about 10 minutes.
  8. Garnish with parsley before serving.

Notes

For extra flavor, marinate chicken in garlic and olive oil beforehand. Adjust pepperoncini for more or less heat.
