Description

A warm and comforting casserole featuring tender chicken, mushrooms, and rice baked in a rich cream sauce.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mushrooms, sliced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, then add onions and garlic and sauté until translucent.
  3. Add the chicken and cook until browned, about 5-7 minutes.
  4. Stir in mushrooms and cook until softened.
  5. Add rice, chicken broth, heavy cream, thyme, salt, and pepper; stir to combine.
  6. Transfer the mixture to a greased baking dish and top with cheese if desired.
  7. Bake for 25-30 minutes or until the rice is cooked and the sauce is bubbly.
  8. Allow to cool slightly before serving.

Notes

For a vegan version, replace chicken with firm tofu, use vegetable broth and coconut cream instead of heavy cream.
