A warm and comforting casserole featuring tender chicken, mushrooms, and rice baked in a rich cream sauce.

- 1 lb chicken breast, sliced
- 2 cups mushrooms, sliced
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 cup grated cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, then add onions and garlic and sauté until translucent.
- Add the chicken and cook until browned, about 5-7 minutes.
- Stir in mushrooms and cook until softened.
- Add rice, chicken broth, heavy cream, thyme, salt, and pepper; stir to combine.
- Transfer the mixture to a greased baking dish and top with cheese if desired.
- Bake for 25-30 minutes or until the rice is cooked and the sauce is bubbly.
- Allow to cool slightly before serving.
Notes
For a vegan version, replace chicken with firm tofu, use vegetable broth and coconut cream instead of heavy cream.
