  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup sliced mushrooms
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add penne pasta and cook until al dente, following package instructions. Once done, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken pieces seasoned with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes or until the chicken is browned and cooked through.
  3. Toss in sliced mushrooms and asparagus, sautéing for an additional 3-4 minutes until the vegetables are tender.
  4. Pour the heavy cream into the skillet, stirring to combine. Allow it to come to a gentle simmer.
  5. Gradually stir in grated Parmesan cheese until it melts and combines with the cream, adjusting the consistency with a splash of reserved pasta water if necessary.
  6. Add the cooked penne to the skillet. Toss to evenly coat the pasta in the creamy sauce, cooking for an additional minute so everything warms through.
  7. Dish the pasta into bowls and, if desired, garnish with more Parmesan cheese. Enjoy warm for a comforting meal.
