- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, chopped

- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Combine the chicken breasts, heavy cream, chicken broth, sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper in a crockpot.
- Stir to combine all ingredients well.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until cooked through.
- Shred the chicken with two forks and stir it back into the sauce.
- Serve hot, topped with grated Parmesan cheese.
Notes
For a richer flavor, brown the chicken briefly before adding it to the crockpot. Adjust seasoning at the end with salt and a squeeze of lemon juice.
