Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, chopped
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Combine the chicken breasts, heavy cream, chicken broth, sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper in a crockpot.
  2. Stir to combine all ingredients well.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until cooked through.
  4. Shred the chicken with two forks and stir it back into the sauce.
  5. Serve hot, topped with grated Parmesan cheese.

Notes

For a richer flavor, brown the chicken briefly before adding it to the crockpot. Adjust seasoning at the end with salt and a squeeze of lemon juice.
