Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent and aromatic.
- Next, toss in the diced potatoes along with the chicken broth. Bring everything to a rolling boil, then reduce the heat and let it simmer. Cook for about 15-20 minutes, or until the potatoes are tender enough to be easily pierced with a fork.
- Stir in the cooked, shredded chicken, heavy cream, salt, black pepper, and thyme. Warm the soup thoroughly, stirring until everything is evenly mixed, but avoid boiling the cream to maintain its luscious texture.
