- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the mixed vegetables and cook for another 3-4 minutes until vibrant and slightly tender.
- Stir in the cooked, shredded chicken, chicken broth, thyme, and rosemary. Bring to a gentle simmer.
- Fold the orzo pasta into the mixture and cook according to package instructions, roughly 8-10 minutes, until al dente.
- Once the orzo is cooked, slowly stir in the heavy cream. Season with salt and pepper to taste and warm through for an additional 2-3 minutes.
- Serve warm, garnished with fresh herbs if desired.

For a lighter version, consider substituting heavy cream with half-and-half. Fresh herbs can elevate the dish’s flavor.
