- 2 boneless skinless chicken breasts, cooked & diced
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 8 oz orzo pasta
- 2 celery stalks, finely diced
- 2 carrots, finely diced
- 1/2 yellow onion, finely diced
- 5 tbsp butter
- 2 tbsp olive oil
- 2 cups chicken broth
- 1/2 cup heavy whipping cream
- 1 tsp chicken bouillon powder
- 1/3 cup all-purpose flour
Instructions
- Cook the orzo according to the package instructions; drain and set aside.
- In a bowl, season diced chicken with onion powder, garlic powder, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat, add the seasoned chicken, and cook until the internal temperature reaches 165°F, about 6-7 minutes. Remove chicken from heat and dice into bite-sized pieces.
- In a large skillet, melt butter and olive oil over medium-high heat. Once melted, add diced onion, carrots, and celery, sautéing for 4–5 minutes until softened.
- Reduce the heat to low, sprinkle flour over the veggies, and whisk to form a roux, cooking for an additional 2–3 minutes.
- Gradually whisk in chicken broth and heavy cream until the mixture is smooth and thickened.
- Stir in the diced chicken and simmer until you achieve your desired thickness.
- Add the drained orzo to the skillet, mix until well combined, and let it warm through before serving. Enjoy!
