Ingredients

  • 2 boneless skinless chicken breasts, cooked & diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 8 oz orzo pasta
  • 2 celery stalks, finely diced
  • 2 carrots, finely diced
  • 1/2 yellow onion, finely diced
  • 5 tbsp butter
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tsp chicken bouillon powder
  • 1/3 cup all-purpose flour

Instructions

  1. Cook the orzo according to the package instructions; drain and set aside.
  2. In a bowl, season diced chicken with onion powder, garlic powder, paprika, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat, add the seasoned chicken, and cook until the internal temperature reaches 165°F, about 6-7 minutes. Remove chicken from heat and dice into bite-sized pieces.
  4. In a large skillet, melt butter and olive oil over medium-high heat. Once melted, add diced onion, carrots, and celery, sautéing for 4–5 minutes until softened.
  5. Reduce the heat to low, sprinkle flour over the veggies, and whisk to form a roux, cooking for an additional 2–3 minutes.
  6. Gradually whisk in chicken broth and heavy cream until the mixture is smooth and thickened.
  7. Stir in the diced chicken and simmer until you achieve your desired thickness.
  8. Add the drained orzo to the skillet, mix until well combined, and let it warm through before serving. Enjoy!
