Description

A comforting casserole featuring layers of tender chicken and soft potatoes in a creamy sauce topped with melted cheese.


Ingredients

  • 2 cups chicken, shredded
  • 4 medium potatoes, peeled and sliced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 can cream of chicken soup
  • 2 tablespoons butter, melted
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375F (190C) and grease a casserole dish.
  2. Boil sliced potatoes in salted water until fork-tender (10-12 minutes), then drain.
  3. Layer the potatoes evenly at the bottom of the greased dish.
  4. Combine chicken, cream of chicken soup, milk, garlic powder, salt, and pepper in a bowl. Pour over the potatoes.
  5. Sprinkle cheese on top and drizzle with melted butter.
  6. Bake for 25-30 minutes until the cheese is bubbling and golden.
  7. Allow to rest for 5 minutes before serving.

Notes

For a vegan version, substitute chicken with tofu or tempeh, and use plant-based ingredients.
