  • ½ cup Yellow Onion, diced
  • 1 clove Garlic, minced
  • 3 tablespoons All Purpose Flour
  • 3 tablespoons Butter
  • 1 1/5 cups Chicken Broth
  • 3 teaspoons Curry powder
  • 1 cup Milk
  • ½ cup Shredded Gruyere or white cheddar
  • 1 tablespoon Parsley
  • 3 cups Broccoli Florets
  • ¼ cup Panko Bread Crumbs
  • 2 cups Long Grain White Rice, uncooked
  • 3 ½ cups water

Instructions

  1. Preheat oven to 375°F. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet and cook chicken until golden brown, then set aside.
  3. Sauté onion until translucent, then add garlic.
  4. Add butter and flour, cooking to form a roux.
  5. Gradually whisk in chicken broth, curry powder, and milk; simmer until slightly thickened.
  6. Stir in cheese and parsley.
  7. Combine cooked rice, broccoli, sliced chicken, and sauce in a casserole dish.
  8. Sprinkle panko on top and bake for 20-25 minutes until bubbly and golden brown.
  9. Let cool for 10 minutes before serving.

Notes

Letting the casserole rest helps the sauce set, making slicing and serving cleaner. For an extra-crisp top, broil for the last 60–90 seconds.
