- ½ cup Yellow Onion, diced
- 1 clove Garlic, minced
- 3 tablespoons All Purpose Flour
- 3 tablespoons Butter
- 1 1/5 cups Chicken Broth
- 3 teaspoons Curry powder
- 1 cup Milk
- ½ cup Shredded Gruyere or white cheddar
- 1 tablespoon Parsley
- 3 cups Broccoli Florets
- ¼ cup Panko Bread Crumbs
- 2 cups Long Grain White Rice, uncooked
- 3 ½ cups water
Instructions
- Preheat oven to 375°F. Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet and cook chicken until golden brown, then set aside.
- Sauté onion until translucent, then add garlic.
- Add butter and flour, cooking to form a roux.
- Gradually whisk in chicken broth, curry powder, and milk; simmer until slightly thickened.
- Stir in cheese and parsley.
- Combine cooked rice, broccoli, sliced chicken, and sauce in a casserole dish.
- Sprinkle panko on top and bake for 20-25 minutes until bubbly and golden brown.
- Let cool for 10 minutes before serving.
Notes
Letting the casserole rest helps the sauce set, making slicing and serving cleaner. For an extra-crisp top, broil for the last 60–90 seconds.
