- 1 pound boneless, skinless chicken breasts
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Season the chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a large skillet over medium heat.
- Add the seasoned chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove and set aside to rest.
- In the same skillet, add diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent.
- Stir in the cooked rice, black beans, and corn. Combine well and allow to heat through for another 5 minutes.
- Slice the chicken and arrange it on top of the rice mixture. Sprinkle with shredded cheese and cover. Reduce heat to low until cheese melts, about 5 minutes.
- Remove from heat, garnish with fresh cilantro, and serve warm.
Notes
For enhanced flavor, marinate the chicken in lime juice and spices before cooking. Use day-old rice for better texture.
