Description

A delightful twist on classic Mexican flavors, this Crazy Chicken features layers of spices, chicken, rice, and melted cheese, perfect for family gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken breasts with cumin, chili powder, salt, and pepper. Heat olive oil in a large skillet over medium heat.
  2. Add the seasoned chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove and set aside to rest.
  3. In the same skillet, add diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent.
  4. Stir in the cooked rice, black beans, and corn. Combine well and allow to heat through for another 5 minutes.
  5. Slice the chicken and arrange it on top of the rice mixture. Sprinkle with shredded cheese and cover. Reduce heat to low until cheese melts, about 5 minutes.
  6. Remove from heat, garnish with fresh cilantro, and serve warm.

Notes

For enhanced flavor, marinate the chicken in lime juice and spices before cooking. Use day-old rice for better texture.
