Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the fresh cranberries to the pan and cook, stirring occasionally, until they soften and burst, about 5 minutes.
  4. Stir in the honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper, letting it thicken for another 3-4 minutes.
  5. Remove the cranberry mixture from the heat and let cool.
  6. Carefully cut a pocket in each chicken breast, ensuring not to cut all the way through.
  7. Stuff each chicken breast with brie cheese pieces, then spoon the cooled cranberry mixture on top of the cheese.
  8. Secure the opening with toothpicks so the filling stays intact while cooking.
  9. In a large oven-safe skillet, heat over medium-high heat and sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  10. Combine panko breadcrumbs and melted butter in a small bowl.
  11. Remove the chicken from the skillet once browned and set it aside.
  12. Spread the panko mixture over the stuffed chicken breasts.
  13. Return the chicken to the skillet and transfer it to the preheated oven.
  14. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  15. Let the chicken rest for 5 minutes before serving, then sprinkle with chopped parsley.

Notes

For a healthier alternative, substitute honey with maple syrup or agave nectar. Ensure that chicken is not overstuffed, and adjust sweetness to taste.
