Ingredients

- 2 cups shredded rotisserie chicken
- 1 can white beans (cannellini or great northern), drained and rinsed
- 1 cup corn (frozen or canned)
- 1 can green chilies (mild or hot)
- 4 cups chicken broth (low sodium)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin, ground
- Chili powder, to taste
- 1 cup half-and-half
- 1 cup pepper jack cheese, shredded
- Sour cream, for topping
Instructions
- In a large pot, add shredded rotisserie chicken, white beans, corn, green chilies, chicken broth, diced onion, minced garlic, cumin, and chili powder.
- Set your pot over medium heat and allow it to come to a simmer, cooking for about 10 minutes, stirring occasionally.
- Stir in half-and-half and shredded pepper jack cheese, mixing until the cheese has melted and blended into the chili.
- Ladle into bowls and top with sour cream and extra cheese, then serve hot.
- Store leftovers in freezer-safe containers for quick meals later on.
Notes
For a richer flavor, sauté the onions and garlic before adding other ingredients. Adjust spice levels with fresh jalapeños or cayenne pepper as desired.
