Description

A hearty white chicken chili bursting with comforting flavors, perfect for family gatherings or busy weeknights.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 can green chilies (mild or hot)
  • 4 cups chicken broth (low sodium)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin, ground
  • Chili powder, to taste
  • 1 cup half-and-half
  • 1 cup pepper jack cheese, shredded
  • Sour cream, for topping

Instructions

  1. In a large pot, add shredded rotisserie chicken, white beans, corn, green chilies, chicken broth, diced onion, minced garlic, cumin, and chili powder.
  2. Set your pot over medium heat and allow it to come to a simmer, cooking for about 10 minutes, stirring occasionally.
  3. Stir in half-and-half and shredded pepper jack cheese, mixing until the cheese has melted and blended into the chili.
  4. Ladle into bowls and top with sour cream and extra cheese, then serve hot.
  5. Store leftovers in freezer-safe containers for quick meals later on.

Notes

For a richer flavor, sauté the onions and garlic before adding other ingredients. Adjust spice levels with fresh jalapeños or cayenne pepper as desired.
