Instructions
- In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and minced garlic, sautéing until they’re soft and fragrant—about 5 minutes.
- Add the chicken breasts along with cumin, chili powder, salt, and pepper. Stir to combine everything well; this will be the base of your flavorful chili.
- Pour in the chicken broth and bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes, until the chicken is fully cooked and all the spices meld together beautifully.
- Remove the chicken from the pot, shred it with two forks, and return it to the pot along with the white beans and green chilies.
- Allow everything to simmer together for an additional 5-10 minutes. This step helps the flavors deepen and the beans warm through.
- If desired, stir in the sour cream for a creamy texture. Serve your chili topped with shredded cheese and fresh cilantro for extra flavor and garnish.
