Description

A comforting white chicken chili that brings together vibrant flavors and warmth, perfect for chilly nights.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups chicken broth
  • 1/2 cup sour cream (optional)
  • 1/2 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and minced garlic, sautéing until they’re soft and fragrant—about 5 minutes.
  2. Add the chicken breasts along with cumin, chili powder, salt, and pepper. Stir to combine everything well; this will be the base of your flavorful chili.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes, until the chicken is fully cooked and all the spices meld together beautifully.
  4. Remove the chicken from the pot, shred it with two forks, and return it to the pot along with the white beans and green chilies.
  5. Allow everything to simmer together for an additional 5-10 minutes. This step helps the flavors deepen and the beans warm through.
  6. If desired, stir in the sour cream for a creamy texture. Serve your chili topped with shredded cheese and fresh cilantro for extra flavor and garnish.

Notes

Using a rotisserie chicken can save time and infuse your chili with tons of flavor. Customize your spices to make it your own, and add a squeeze of lime just before serving for a refreshing zing.
