Description

Ingredients

  • 2 tablespoons extra virgin olive oil (divided)
  • 1 medium onion (diced)
  • 2 medium carrots (peeled and sliced)
  • 2 celery ribs (sliced or diced)
  • 1 medium potato (peeled and diced)
  • 5 garlic cloves (divided; 4 minced, 1 grated)
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • 2 bay leaves
  • ¼ teaspoon cayenne pepper (optional)
  • 3 cans (15 oz each) white beans, drained
  • 3 cups low-sodium vegetable broth
  • 1 teaspoon sea salt (or to taste)
  • ⅛ teaspoon black pepper (or to taste)
  • 1 cup fresh parsley (chopped)
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest

Instructions

  1. Prepare the Vegetables: Wash and peel your vegetables. Dice the onion finely, slice the carrots, trim and slice the celery, and cut the potato into small cubes. Mince four garlic cloves and set aside one clove to grate later.
  2. Heat the Olive Oil: In a large pot over medium heat, add 1 tablespoon of olive oil and warm until it shimmers.
  3. Sauté the Onion: Add the diced onion and cook for about 5 minutes until translucent.
  4. Add Aromatics and Vegetables: Stir in the minced garlic, carrots, celery, and potato, along with the smoked paprika, dried rosemary, dried thyme, and cayenne pepper if using. Cook for 1 minute.
  5. Add Beans and Broth: Add the white beans, vegetable broth, bay leaves, sea salt, and black pepper. Gently stir to combine.
  6. Simmer the Stew: Bring to a simmer, cover, and cook for 20 minutes, stirring occasionally.
  7. Prepare the Finishing Flavors: Chop the parsley, grate the reserved garlic clove, zest the lemon, and squeeze out the juice.
  8. Combine Finishing Ingredients: Stir in the parsley, grated garlic, lemon juice, lemon zest, and remaining olive oil. Adjust seasoning as needed.
  9. Serve and Garnish: Ladle into bowls and serve with crusty bread, optionally topped with grated Parmesan cheese or olive oil.

Notes

This stew can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
