Description

30-minute delicious and healthy sweet potato chili recipe! Ground turkey, sweet potatoes, and tomatoes simmer in a hearty, flavorful broth. Topped with avocado, cilantro, and cheese for a cozy fall meal.


Ingredients

  • 1 tbsp olive oil
  • 1/2 sweet onion, diced
  • 57 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, cubed (about 12 oz)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup chopped cilantro (garnish)
  • 1/3 cup shredded cheddar cheese (garnish)
  • 2 sliced avocados (garnish)

Instructions

1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic. Cook for 1–2 minutes until fragrant.

2. Add ground turkey and break it up. Season lightly with salt and pepper. Cook until no longer pink.

3. Add diced tomatoes, tomato sauce, broth, sweet potatoes, chili powder, paprika, cumin, and sugar. Bring to a boil, then reduce heat. Simmer 15 minutes or until potatoes are fork-tender.

4. Add frozen corn. Cook over medium-high heat until bubbling. Season with more salt and pepper as needed.

5. Serve hot, garnished with avocado, cilantro, and cheese. Enjoy!

Notes

To reduce heat, omit or reduce chili powder.

Sweet potatoes should be evenly cubed for quick, even cooking.

Leftovers taste even better—store in the fridge up to 4 days or freeze for 3 months.
