Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken with salt and pepper; brown in skillet for 4-5 minutes on each side. Remove and set aside.
  4. Add onion and garlic to skillet; sauté for 3 minutes until the onions soften and become fragrant.
  5. Stir in mushrooms and broccoli; cook for another 5 minutes until vegetables are tender.
  6. Add rice and stir for 2 minutes to toast it slightly.
  7. Pour in chicken broth and heavy cream; stir to combine and bring to a gentle simmer.
  8. Return chicken to the skillet, cover with the rice mixture.
  9. Bake for 25-30 minutes until the chicken is cooked through and the rice has absorbed the delicious liquid.
  10. Garnish with freshly chopped parsley before serving.
