- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Season chicken with salt and pepper; brown in skillet for 4-5 minutes on each side. Remove and set aside.
- Add onion and garlic to skillet; sauté for 3 minutes until the onions soften and become fragrant.
- Stir in mushrooms and broccoli; cook for another 5 minutes until vegetables are tender.
- Add rice and stir for 2 minutes to toast it slightly.
- Pour in chicken broth and heavy cream; stir to combine and bring to a gentle simmer.
- Return chicken to the skillet, cover with the rice mixture.
- Bake for 25-30 minutes until the chicken is cooked through and the rice has absorbed the delicious liquid.
- Garnish with freshly chopped parsley before serving.
