- 650 g skinless, boneless chicken breast (cut into bite-sized chunks)
- 30 g plain flour
- 3 garlic cloves (peeled and crushed)
- 100 g sun-dried tomatoes (drained and finely chopped)
- 1 tsp dried oregano
- 2 tsp paprika
- 300 ml boiling water
- 1 chicken stock cube (crumbled)
- 100 g cream cheese
- 50 g parmesan (grated)
- 15 g fresh basil leaves
- Sea salt and freshly ground black pepper (to taste)
Instructions
- In a bowl, toss the chicken pieces with plain flour, salt, and pepper until evenly coated.
- Place the coated chicken into your slow cooker along with crushed garlic, sun-dried tomatoes, oregano, paprika, crumbled stock cube, and boiling water. Stir gently to combine all the ingredients well.
- Cover the slow cooker and cook on HIGH for 150 to 180 minutes or LOW for 300 to 360 minutes until the chicken is thoroughly cooked and tender.
- About 15 minutes before serving, mix in the cream cheese, grated parmesan, and fresh basil. Stir until the mixture is combined and creamy, then season to taste with salt and pepper.
Notes
For added depth of flavor, rapidly sear the chicken pieces before adding to the slow cooker. This dish can be made ahead and frozen for easy weeknight meals.
