Instructions
- Gather and prep all ingredients. If desired, sear chicken in olive oil until just browned on both sides.
- In your slow cooker, combine the rinsed rice and chicken broth, ensuring the rice is evenly spread.
- Layer the chicken on top of the rice and pour the minced garlic, lemon zest, thyme, oregano, salt, and pepper over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Right before serving, squeeze the fresh lemon juice over the dish.
