- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 ounces egg noodles
- 1 cup sour cream
- Fresh parsley for garnish
Instructions
- Place the beef stew meat in your slow cooker.
- Sprinkle the chopped onion, minced garlic, and sliced mushrooms on top of the beef.
- Pour in the beef broth and Worcestershire sauce.
- Season with paprika, salt, and pepper, then stir gently to combine.
- Cover the slow cooker and set it to low for 7-8 hours or high for 4-5 hours until the beef is tender.
- Approximately 30 minutes before serving, cook the egg noodles according to the package instructions, keeping them al dente.
- Just before serving, stir in the sour cream into the beef mixture.
- Serve the stroganoff over the cooked noodles and garnish with fresh parsley.
Notes
For extra flavor, consider searing the beef before adding it to the slow cooker. Adjust cooking time based on your slow cooker’s heat settings.
