Description

A hearty and vibrant one-pot soup filled with tender chicken, zesty spices, and vibrant veggies, perfect for weeknight meals.


Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Toppings: avocado, cheese, sour cream, cilantro

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Sauté the chopped onion and bell pepper until fragrant and softened, about 5 minutes.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Stir well to combine all the ingredients.
  3. Bring the soup to a gentle boil, then lower the heat and let it simmer uncovered for about 20 minutes, allowing all those incredible flavors to meld together.
  4. Taste and season with salt and pepper to your liking, adjusting the flavors as desired.

Notes
