Ingredients

- 1 (28-ounce) can whole tomatoes
- 1/4 cup + 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh Mexican oregano, chopped
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 (7-ounce) package cut fideo pasta
- 1 quart chicken or vegetable broth
- 1/3 cup chopped cilantro
Instructions
- In a blender, combine the whole tomatoes, 1/4 cup of olive oil, minced garlic, oregano, salt, and ground cumin. Blend on high until smooth.
- In a large pot over medium heat, add the remaining 3 tablespoons of olive oil. Once hot, add the fideo pasta and toast gently for about 4 minutes until golden brown.
- Pour the blended tomato mixture into the pot with the toasted noodles and fry gently for a minute. Then add the broth, bring to a boil, lower heat, cover, and simmer for about 5 minutes until pasta is cooked.
- Stir in chopped cilantro just before serving. Enjoy hot, preferably with crusty bread or a side salad.
Notes
Toasting the pasta enhances flavor; taste before adding salt; eye the cooking time for the best texture.
