- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 red bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable stock
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- ½ teaspoon turmeric
- Pinch of saffron (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in minced garlic and cook for another minute until fragrant.
- Toss in the carrots, zucchini, and bell pepper. Stir and sauté for about 5 minutes until slightly softened.
- Mix in the chickpeas and diced tomatoes, followed by vegetable stock, cumin, cinnamon, turmeric, saffron (if using), salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 40-50 minutes until the vegetables are tender, and the flavors meld beautifully.
- Taste and adjust seasoning as needed.
- Garnish with fresh cilantro and serve warm over couscous or rice.
